CUBS WIN!!!!


The Cubs won tonight by beating Milwaukee 19 - 5 and are now back in first place where they belong.

I know, I know, Cardinals Fans will correct me. The Cards did win today and as of right now the Cubs and the Cardinals are sharing first place.

Then, starting on Friday and continuing on Saturday and Sunday, the Cubbies are coming to the Lou to battle the Cards. The games will be great I am sure and if any has extra tickets and they would like to take me with, let me know!

But I will just leave you with this sentiment: GO CUBS!

It's Burger Time!

I am on Weight Watchers, as many of my friends. I love being on Weight Watchers and finding new recipes to use. With the weather warming up Sven has put our charcoal grill on our porch and it is there to stay for the season, but I find myself craving hamburgers, more cheeseburgers.

I guess that cheeseburgers are not that bad, the way that I make them with the right cheese and bun, but after awhile it gets boring, but then I found this.



Weight Watchers Double Salsa Burgers


Ingredients
1 1/2 lbs lean ground beef
1 large tomato, seeded and finely chopped
1/4 cup finely chopped red onions
1 garlic clove, minced
1/2 cup finely chopped green sweet peppers
2 finely chopped seeded jalapeno peppers (I don't eat jalapeno's so I will leave that out)
2 cups shredded lettuce (I personally hate shredded lettuce, I prefer the leaf)
1 tablespoon snipped cilantro
1/3 cup finely shredded cheddar cheese
1/4 teaspoon salt
1/4 cup sour cream and/or guacamole (to serve)

Preparation
1. For the salsa: In a bowl, combine the tomato, garlic, onion, green peppers, jalapeno peppers, cilantro, and salt. Set aside 2 tablespoons of the salsa. Cover and chill the remaining salsa until serving time.
2. In another bowl, combine the ground beef and the 2 tablespoons of reserved salsa; mix well.
3. Shape the mixture into six 1/2-inch-thick oval patties.
4. Grill the patties on an uncovered grill directly over medium coals for about 13-15 minutes (or until an instant-read thermometer inserted in side of patty registers 160 degrees F), turning the patties once halfway through grilling time.
5. Arrange the shredded lettuce on individual plates. Top with the burgers, the remaining salsa, and the cheddar cheese.
6. Serve with sour cream and/or guacamole.

Nutritional information per serving: 260 calories, 15.6g fat, 1g fiber

Totes are Everywhere



It seems that every store has its own reusable tote. As I was looking in the Sunday paper today, I saw that Home Depot offering a FREE reusable tote to anyone. No purchase necessary. Also in the paper I saw that Macys has their own tote also.

Being how everyone is going to the reusable totes I ordered some off Etsy, from seller niccocjm

Also, all the grocery stores have their own reuseable totes too. And I heard on the news last night that on the ballot they are putting up for a vote a 20 cent tax per plastic bag that consumers use. So, start getting your Totes!

Pin Up Aprons

A blog that I read, www.howaboutorange.blogspot.com, featured the Etsy seller perdoozy, and she makes Pin Up Aprons. They are so cute and definitely I could see myself wearing when making dinner.




Now if I could just find an apron for Sven :)

I feel like Chicken tonight.

I just put this in the crockpot for dinner tonight. This is Sven and my favorites, so I thought I would share it. It is so easy to put together and soooooooo good!

Salsa Chicken

4 chicken breasts (We usually do 6 chicken breasts so we have leftovers!)
1 can rinsed black beans
1 bag frozen corn (we have started to use canned corn and we use two cans, cause I LOVE me some corn!)
1 jar salsa (get the kind you like and you can customize this dish, that is why we love this dish!)

Mix all together in the crockpot and cook 8-9 hours on low. Shred chicken w/ 2 forks, but really as soon as you pick it up or mix it, it just falls apart and shreds apart itself. You can eat it in tortillas with shredded cheese on top or over rice.

If you follow Weight Watchers a serving size is a cup which is huge and is 4 points per serving.

I don't understand...











I really don't understand WHY people go on a talk show to promote their book but when I go to the bookstore, they tell me it hasn't been released yet! WHAT?? I can buy it online but not in the store? UGH!

If anyone happens across this book in Borders or Barnes and Noble, please let me know.

Wurstfest

This weekend, Sven and I, along with my parents and my sister, went to the Wurstfest in Hermann, MO. I think that is the worst name possible for a festival, me not knowing what it meant and only knowing it was German.

Apparently, Wurstfest is a salute to sausage and it means Sausage Fest. That it was, but not in the way many of you are thinking :) There were 10 different vendors with 50 - 60 different kinds of sausage. There were snack sticks, jerky, kielbasa, bologna, and oh so much more! Oh, and they did have beer! What would a German festival be without beer?!

When you need to cleanse your palette and take a break from the sausage, you can head on over to Tin Mill Brewery. They had a special to try 5 beers for $5. Can't beat that!

I told you all that to tell you this: Sven and I bought alot of sausage and packed our freezer, we have a couple dinners set!

Tonight's dinner was Smoked Kielbasa with Cheese inside, mmmmmmmmm cheese! The Kielbasa was from Paradise Locker Meats. This year Paradise Meat Locker's Kielbasa won the Champion award at Wurstfest and after dinner, I can understand why!

This was our second year going to the Wurstfest and we will be going next year too!



Bleedin' Blue

So, I will start things off!

I know that it isn't Opening Day and it is two days late but I thought that I should discuss it.

It is HARD to be a Cubs fan in Cardinals country.

I am from Chicago and raised a Cubs fan, all my friends and even my husband are a Cardinals fan! When they are doing bad, which is like all the time, I seem to be the butt of all the jokes, most of the time I laugh at them and the other times enough is enough, it gets old.

But year after year, I hope and hope they do better, they did make it to the playoffs last year and were the Division Champions! This year, I have read on many blogs that they have a really strong team and believe that they will go all the way! We shall see!
